Pineapple Perfection Cake |

This recipe came from a friend (Frances) of mine that was a wonderful cook. She always had the best recipes.. Ingredients:
2 eggs |
2 cups flour (plain) |
2 cups sugar |
2 teaspoons baking soda |
1 teaspoon vanilla |
1 (20 ounce) can crushed pineapple, save juice |
1 cup chopped pecans (this recipe does not call for butter!!only in the icing) |
1 (8 ounce) package cream cheese (room temp.) |
1/2 cup soft butter |
1/2 cup chopped pecans |
1 3/4 cups confectioners' sugar |
1 teaspoon vanilla |
Directions:
1. combine above ingredients mix well. 2. pour in a well greased 9x13 pan. 3. bake at350* for 35-40 minutes Frosting directions: combine above ingredients spread on cake while still warm. 4. chill in refigerator. 5. serve cold- Enjoy! |
