This one is adventurous... great dessert for the average dinner party Ingredients:
1 pie crust |
3/4 cup white sugar |
3 tablespoons cornstarch |
1 (20 ounce) can crushed pineapple with juice |
1 tablespoon lemon juice |
2 cups of crushed pecans |
Directions:
1. Preheat oven to 425 degrees F (220 degrees C). 2. In a medium saucepan combine sugar, cornstarch, pineapple with juice, and lemon juice. 3. Cook over medium heat, stirring constantly until thickened, then allow to boil 1 minute. 4. Cool slightly and pour mixture into pie crust 5. sprinkle crushed pecans evenly 6. Place in preheated oven and bake for 35 minutes. 7. Serve chilled or at room temperature. 8. mmmmmm yum |
