Pineapple Peach Coconut Green Smoothie

This is a perfect introduction to green smoothies! It's sweet, tropical, and delicious. You'll never taste the spinach, I promise. Even if you are an experienced green smoothie drinker, this one is just amazingly good! As you become accustomed to greens in your smoothies try experimenting with other greens besides spinach. I love arugula in this, cilantro, or even radish greens.
Ingredients:
1 1/2 cups fresh pineapple chunks
1 cup coconut milk (not from a can, it's by the almond milk and soy milk)
1 cup frozen peaches
10 raw almonds (a small palmful)
1 cup fresh spinach leaves
1 tablespoon coconut oil (also called coconut butter, it comes in a jar and is solid at room temperature)
Directions:
1. Put the pineapple, coconut milk, almonds, and spinach in a high speed blender in that order. Blend for 30 seconds or so until well mixed. Gradually add the frozen peaches and blend well. Melt the coconut oil in the microwave for 20 seconds and add to blender. Blend for 10 more seconds. Enjoy!
2. Notes: You can use any combination of fresh or frozen fruits. If using fresh, just add 1-2 cups of ice before adding the coconut oil. Don't put the ice in first! Wait till you have a good liquid base before adding ice or it can damage your blender. If using all frozen fruits, you may need to add more coconut milk or water. The coconut milk I use is So Delicious brand. It's non-dairy and full of the GOOD fats. You can find it in the refrigerated section by the soy milk and almond milk.
