Pineapple Orange Sunshine Cake |

Got this recipe from a sweet lady, Adeline, who used to go to the same coffee place as I do. She talked about a function she was going to and was taking this cake. It sounded so good and it tastes even better. Have had my own requests for this one. Read more . Tastes better the second day. Ingredients:

1 golden yellow cake mix ( i use the one with pudding in the mix) |
4 eggs |
1/4 cup apple sauce |
1 10 oz tin ( the sizes vary, but an oz or 2 won't matter) mandarin orange drained, liquid reserved. |
topping |
1 14oz tin crushed pineapple with juice |
8 oz container cool whip |
a 3 1/2 oz pkg instant vanilla pudding |
Directions:
1. Cake: Preheat oven to 350F 2. With mixer, beat all ingredients, except oranges, but including reserved liquid from oranges, , for about 2 minutes. 3. Stir in oranges by hand 4. Pour into greased and floured 9x13 cake pan. 5. Bake for 30-35 minutes, or until toothpick inserted in center of cake comes out clean. 6. Cool completely 7. ******************************************************************************* 8. TOPPING: 9. Mix dry pudding with pineapple and juice til combined and thick. 10. Fold in Cool Whip . 11. Put on top of cooled cake. Refrigerate a few hours to allow melding of flavors |
