Pineapple Oatmeal Muffins |

My notes on this recipe suggest adding raisins, and perhaps more spice. Ingredients:
8 ounces crushed pineapple |
1 cup rolled oats |
1/2 cup sour cream |
1/3 cup shortening |
1/3 cup brown sugar |
1 teaspoon grated orange peel |
1 egg, beaten |
1 1/4 cups flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon ginger |
1 teaspoon salt |
Directions:
1. Combine undrained pineapple, oats and sour cream; let stand 15 minutes. 2. Cream shortening, sugar and peel together thoroughly; stir. 3. in egg. 4. Sift flour with powder, soda, ginger and salt; add to creamed mixture alternately with oat mixture. 5. Bake in well greased muffin tins at 400 for about 25 minute. |
