Nieve is the Spanish word for 'snow.' One taste of this extraordinary ice, and you'll see why each bite feels like freshly fallen snow drenched in lime and pineapple. Ingredients:
5 cups coarsely chopped pineapple (1 large pineapple) |
1/4 cup sugar |
1/4 cup fresh lime juice |
cinnamon chips |
Directions:
1. Place the pineapple in a food processor, and process 2 minutes or until very smooth. Add sugar and lime juice, and pulse 2 times or until blended. Strain pineapple mixture through a sieve into a bowl. Discard solids. Pour mixture into the freezer can of an ice-cream freezer; freeze according to the manufacturer's instructions. Spoon into a freezer-safe container; cover and freeze 30 minutes or until firm. Serve with Cinnamon Chips. 2. Note: To prepare nieve without an ice-cream freezer, pour mixture into an 8-inch square baking dish; cover and freeze until firm, stirring occasionally. |
