Pineapple Muffins from Mini-Wheats |

This is a recipe that was on the side of a box of Mini-Wheats breakfast cereal from Kellogg's. I have been making it for my husband for over 25 years and he would have them every day if I would make it. I do sometimes vary the recipe by adding the following: nutmeg, cinnamon, cranraisins, raisins and any type of nuts. Ingredients:
1 1/4 cups all-purpose flour |
1 tablespoon sodium-free baking powder (i use regular) |
1/4 cup firmly packed brown sugar |
9 kellogg's frosted mini-wheats cereal, finely crushed (apple or sugar frosted) |
1 egg |
1/4 cup vegetable oil |
1 (8 ounce) can crushed pineapple in juice, not drained |
Directions:
1. Stir together flour, baking powder, sugar and crushed Kellogg's Frosted Mini-Wheats biscuits. 2. In large mixing bowl, beat egg slightly. Stir in oil and pineapple including liquid. 3. Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 in muffin pan. 4. Bake at 400 $ about 20 minutes or until golden brown. Server warm. |
