pineapple mousse |
preparation time: 25 minutes |
chilling time: 3 hours |
cut lengthwise |
1 ripe pineapple |
scoop out fruit from both halves, removing the core. |
finely chop the fruit, reserving juice. |
mix pineapple with |
1 1/2 tablespoons lime juice |
1/2 cup honey |
2 cups heavy cream, whipped |
Directions:
1. Spoon mixture into an 8-inch square pan. 2. Place in freezer for approximately 3 hours or until slightly firm. 3. (To make this dish ahead of time, freeze the pineapple mixture solid and then remove from freezer 20 miuntes before serving to allow it to soften.) 4.
