This recipe can be prepared in 45 minutes or less.This refreshing condiment is great with the ham, or try it with grilled fish or chicken. Ingredients:
1/2 large pineapple, peeled, cored, cut into 1/4-inch pieces (about 3 cups) |
1/2 cup finely chopped green bell pepper |
1/2 cup finely chopped red onion |
1/4 cup chopped fresh mint |
2 teaspoons grated lemon peel |
Directions:
1. Stir all ingredients in large bowl to blend. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover; chill.) |
