This is one of my mother's pie recipes that Ive had for years... If you dont like the meringe you could always use cool whip... Ingredients:
3 eggs, separated |
1 cup sugar |
1/4 cup plus 1 tablespoon all purpose flour |
2 cups crushed pineapple, undrained |
1 teaspoon lemon juice |
1/8 teaspoon salt |
1 tablespoon butter |
1 tablespoon water |
1/4 teaspoon cream of tartar |
3/4 teaspoon vanilla extract |
1/4 cup plus 2 tablespoons sugar |
1 baked 9 inch pastry shell |
Directions:
1. Beat egg yolks; combine yolks, sugar, flour, pineapple, lemon juice, and salt in top of double boiler; stir well. 2. Cook over boiling water, stirring constantly, until thickened. 3. Remove from heat; stir in butter. 4. Pour mixture into pastry shell. 5. Cream egg whites, water, cream of tartar, and vanilla extract in a small mixing bowl; beat until foamy. 6. Gradually add sugar; continue beating until stiff peaks form. 7. Spread meringue over pie and seal edges carefully. 8. Bake at 400 degrees about 10 minutes or until lightly browned. 9. Cool. Refrigerate pie until chilled. |
