Pineapple Marquise- Frozen Pineapple Dessert |

This recipe makes me wish it was warm here for this tropical dessert! Ingredients:
2 small fresh ripe pineapples |
sugar |
1 1/4 cups pineapple juice |
3/4 cup water |
1 cup sugar |
rind and juice of 1 lemon |
1 1/4 cups cream to be whipped |
3 tbs kirsch |
Directions:
1. Cut each pineapple in 1/2 lengthwise leaving on green tops. 2. Cut pulp out of pineapple shell discarding hard core and being careful not to cut through shell. 3. Sprinkle insides of shell with a bit of sugar and set in refrigerator 4. until ready to use. 5. Chop pineapple flesh to a fine texture. 6. Add pineapple juice, water, sugar, and lemon rind . 7. Bring mixture to a boil and boil 5 minutes. 8. Then strain and add the lemon juice.. 9. Freeze strained mixture for 4 hours. 10. Then break up with a fork and fold in the whipped cream and kirsch. 11. Return to freezer. 12. Before serving, spoon mixture evenly into the 4 pineapple 13. shells and serve immediately. 14. Garnish with mint leaves, fresh strawberries if desired |
