Pineapple,macadamia and Coconut Cake |

Taken from an Entertaining magazine. Ingredients:
3/4 cup raw sugar |
2 eggs |
1 cup macadamia nuts, crushed |
250 g pineapple, tinned, crushed, drained |
1 cup self raising flour |
1/2 cup coconut |
Directions:
1. Beat sugar and eggs until thick and creamy. 2. Mix nuts and pineapple together. 3. Add to egg and sugar mixture. 4. Add flour and beat well. 5. Grease and flour a ring tin. 6. Spoon in mixture, sprinkle with coconut. 7. Bake 180 C for 40 - 45 minutes till golden. 8. Frost if desired. |
