I found these in a cookbook I got at an auction this weekend and thought I would share. They were to good to keep to myself. - Better Homes and Gardens - More from your Microwave - 1980 Ingredients:
1 tablespoon instant chicken bouillon granules |
1/3 cup hot water |
1 8-ounce can crushed pineapple |
1 5-ounce can chicken, drained and chopped |
1 egg |
1 cup fine dry seasoned bread crumbs |
1/4 cup finely chopped celery (optional) |
1 tablespoon dried parsley flakes |
assorted crackers |
Directions:
1. Dissolve bouillon in hot water. 2. In a medium mixing bowl combine bouillon, un-drained pineapple, chicken, egg, bread crumbs, celery, and parsley flakes. 3. Mix until well blended but pineapple is still chunky. 4. Drop by rounded teaspoonfuls onto crackers. 5. Arrange 8 crackers in a circle on a dinner plate lined with 2 layers of paper toweling. 6. Place 1 or 2 crackers in center of circle. 7. Micro-cook, uncovered, on 100% (HIGH) 1 to 2 minutes or until hot, rotating a half-turn after 30 seconds. 8. Repeat with remaining appetizers. 9. Make 50 appetizers. |
