Made this for dinner last week. We loved, loved it!!! So refreshing and healthy, too!! Such an easy summer dish and very colorful.
Ingredients:
1 fresh pineapple, cored and finely diced
2 cups chopped tomatoes, drained
1 large cucumber, halved lengthwise and thinly sliced
1/4 cup chopped green onion
1/4 cup red wine vinegar
4 teaspoons vegetable oil
1/2 teaspoon dried basil leaves, crushed
Directions:
1. Combine all ingredients in large serving bowl; cover and chill at least one hour or overnight. Stir again before serving.
