I make this all the time. I do it from my head and I have tried to recreate it here. Its really got a great mingling of flavors. Perfect for leftover rice. The older the better(not TOO old ;)) Ingredients:
8 rings canned pineapple |
1/2 carrot/1 red pepper |
1/2 onion |
1 green onion |
1-2 tbs jalapeƱo pepper |
1 tsp minced garlic |
1 tsp minced ginger |
2 cups cold rice(i like scented) (1-2 day old rice is the best |
2 tbs soy sauce |
1 tsp curry powder |
1 tsp sugar(optional) |
Directions:
1. Grate carrot 2. wash and chop pepper 3. peel and chop onion 4. finely chop green onion 5. Heat oil 6. When it is hot: 7. add garlic and ginger cook 30 seconds 8. add onion cook for 1 minute 9. add pepper/ carrot and pineapple 10. add rice stir about 2 minutes or until rice is shiny 11. add soy, curry and sugar 12. stir and serve |
