A spicy version of fried rice. Good with any meat main dish. I always use low sodium soy sauce whenever I cook - much less salty! Ingredients:
1 tablespoon vegetable oil |
1 -2 garlic clove, minced |
1 teaspoon finely chopped fresh ginger |
1/8 teaspoon crushed red pepper flakes, use more if you want it spicier |
3 cups cold cooked rice |
1/4 cup light soy sauce |
1 (8 1/4 ounce) can crushed pineapple in syrup, drained |
1/4 cup thinly sliced green onion, including green tops |
Directions:
1. In large nonstick skillet, heat oil over medium-low heat until hot. 2. Add garlic, ginger and red pepper, cook and stir 2 minutes. 3. Increase heat to medium-high. Add rice and soy sauce; cook 2 minutes, stirring frequently. 4. Add pineapple, tossing to combine. 5. Heat rice through. Sprinkle with green onions before serving. |
