Keep the pineapple chunks and juice in the freezer until ready to make the Freeze in just a matter of minutes. Make the Pineapple Freeze at dessert time for a refreshing conclusion to a satisfying frittata brunch. If using the raspberry liqueur, garnish with fresh raspberries. Ingredients:
1 (20 ounce) can pineapple chunks, undrained |
8 teaspoons amaretto or 8 teaspoons raspberry liqueur |
Directions:
1. Pour pineapple and its juice into an 8 inch square baking pan. Freeze 2 hours or overnight. 2. Position knife blade in a food processor bowl; spoon frozen mixture into processor bowl; Process mixture until smooth and slushy. 3. Pour mixture into 4 individual dessert dishes. Spoon 2 tsp liqueur over each portion. 4. Serve immediately. |
