This easy weeknight meal has a tropical flair.. light a few tiki torches, play some Hawaiian music and pretend your at a Luau Ingredients:
1 1/2 lbs boneless skinless chicken thighs |
1/2 teaspoon salt |
1/2 teaspoon curry powder |
2 tablespoons olive oil |
1 red bell pepper, cut into strips |
1 pineapple, peeled, cored and cut into chinks |
1 serrano pepper, thinly sliced |
1/4 cup sweetened coconut milk |
1 tablespoon brown sugar |
Directions:
1. sprinkle chicken with salt and curry powder. 2. i a large skillet, heat oil over high heat. 3. add chicken and quickly brown chicken on all sides. 4. reduce heat to medium high. 5. cook about 12 minutes or until no longer pink. 6. transferchicken to a plate and cover to keep warm. 7. for sauce, in skilletadd sweet pepper, cook for 3 minues. 8. add pineapple and cook for5 minutes or until browned. 9. add serrano pepper and cook for 1 mnute. 10. stir in coconut milk and brown sugar and heat through. |
