PINEAPPLE DROP COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Townsend Estate in Grand Prairie, Texas in 1998. Ingredients:
2/3 cup shortening |
1-1/4 cup granulated sugar |
1 teaspoon vanilla extract |
1/2 teaspoon pineapple extract |
1 egg |
2 cups all-purpose flour |
2 teaspoons baking powder |
1/4 teaspoon salt |
3/4 cup crushed pineapple well drained |
1/2 cup pecans chopped |
Directions:
1. Cream shortening, sugar and flavorings then add egg and beat until smooth. 2. Sift flour, baking powder and salt together. 3. Add to egg mixture alternately with drained pineapple. 4. Fold in pecans and drop by teaspoons 3 apart on ungreased cookie sheet. 5. Bake at 350 for 15 minutes. |
