These a very sweet and delicious squares, I'm sure everyone will love them. A variation of this is to melt 2 squares semi-sweet chocolate with 1 tsp. vegetable oil. Drizzle over cooled squares. Let chocolate set before cutting into squares. Ingredients:

1 1/2 cups all-purpose flour |
1/4 cup brown sugar, lightly packed |
1/2 cup butter or 1/2 cup margarine, softened |
3 eggs |
1 cup flaked coconut |
3/4 cup brown sugar, lightly packed |
3/4 cup corn syrup |
1 (14 ounce) can crushed pineapple, well drained |
2 tablespoons butter or 2 tablespoons margarine, melted |
1 teaspoon vanilla extract |
Directions:
1. TO MAKE BASE; 2. Preheat oven to 350°F Spray a 9-inch square pan with cooking spray. In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press into bottom of pan. Bake until lightly browned, 12-15 minutes. Cool slightly. 3. TO MAKE TOPPING:. 4. In a medium bowl, whisk eggs just until blended. Stir in remaining ingredients. Spread over base. 5. Bake until topping is set but still soft in center, 40-45 minutes. Cool completely on a wire rack. Cut into squares. Keep refrigerated. |
