Where did I get this one? Can't remember, but it's one of our favorites! Ingredients:
1 (8 ounce) can pineapple chunks, drained (reserve 1 tbsp of juice) |
2 medium english seedless cucumbers, halved and thinly sliced |
1 cup seedless grapes, halved |
2 teaspoons snipped chives |
2/3 cup mayonnaise |
1/3 cup sugar |
1 teaspoon prepared mustard |
1/4 teaspoon celery seed (optional) |
1 teaspoon prepared horseradish |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. In a bowl combine pineapple, cucumbers, grapes and chives. 2. In another bowl combine mayonnaise, sugar, mustard, celery seed, horseradish and pineapple juice. 3. Pour over mixture and gently mix. 4. Serve with a slotted spoon. |
