This was sort of a side-recipe in an Everyday Food email, designed to accompany broiled chili-lime chicken thighs. It sounds simple and tasty! Ingredients:
1/2 pineapple |
1 english cucumber |
3 tablespoons lime juice |
1/4 cup fresh cilantro, chopped |
salt, to taste |
pepper, to taste |
Directions:
1. Chop pineapple (should be about 4 cups). 2. Slice cucumber into 1/4 inch thick slices (should be about 3 cups). 3. Mix all ingredients, seasoning with salt and pepper to taste. |
