Pineapple Cream Cheese Cake |

What can I say. YUM! Very easy, people will think that you have slaved over a hot oven making this one. Ingredients:
1-8 oz pkg cream cheese, softened |
1/2 cup vegetable oil |
3 eggs |
1 pkg yellow cake mix |
1 can crushed pineapple, drained (reserve juice) |
2 tbsp lime juice |
Directions:
1. Grease sides & bottom of a 9x13-inch pan. 2. Heat oven to 350F. 3. In a large mixing bowl with an electric mixer, beat cream cheese with oil and eggs until well blended. 4. Blend in the cake mix and beat on high speed for 2 minutes. 5. Beat in drained pineapple and lime juice. 6. Spoon into pan. 7. Bake for 28-33 minutes. 8. Test with a toothpick and when inserted in center it comes out clean. 9. Cool in pan on rack for 15 minutes. 10. Carefully invert onto a cake plate to cool completely. 11. Drizzle about 1/2 cup reserved juice over cake (I used a turkey baster to do this). 12. You can skip this step if you like but, it adds extra moisture and enhances the pineapple flavor. 13. Frost with a store bought frosting or dust with powdered sugar. |
