This is a great alternative to traditional coleslaw. It is pleasantly sweet but still tastes like coleslaw... it is diabetic friendly and great for summer! Ingredients:
2 cups coleslaw mix |
1 cup unsweetened crushed canned pineapple, drained |
1/3 cup shredded carrot |
3 medium radishes, shredded |
1/4 teaspoon celery seed |
1/3 cup low-fat mayonnaise |
Directions:
1. Inn a large bowl, combine the first 5 ingredients. 2. Add mayonnaise and toss to coat. 3. Cover and refrigerate until serving. |
