Chewy pineapple-coconut bars on a cookie crust Ingredients:
2 t butter, melted |
3 t sugar |
1 egg |
1 c flour |
1 t baking powder |
2 cans (8 oz each) unsweetened crushed pineapple, drained |
topping |
1 t butter, melted |
1 c sugar |
2 eggs |
2 c flaked coconut |
Directions:
1. Ina bowl, beat butter and sugar. Beat in egg. Combine flour and baking powder; stir into egg mixture. Press into a 9 square baking pan coated with cooking spray. Spread the pineapple over crust; set aside. 2. For topping, in a bowl, beat butter and sugar. Beat in eggs. Stir in coconut. Spread over pineapple. Bake at 325 for 35 - 40 minutes or till golden brown. Cool in pan on wire rack. Cut into bars. |
