This lively side dish brightens up almost any meal. It's especially delicious with curry, and spicy foods. Ingredients:
2 teaspoons olive oil |
1 cup diced onion |
2 teaspoons minced fresh thyme or 1 teaspoon dried thyme |
1/4 teaspoon pepper |
3/4 cup long grain rice or 3/4 cup basmati rice |
1 1/2 cups diced fresh pineapple |
1 cup water |
1/2 cup chopped green onion |
1/2 cup pineapple juice |
2 tablespoons flaked coconut |
1/2 teaspoon salt |
Directions:
1. Heat olive oil in a large saucepan over medium heat. 2. Add diced onion, thyme and pepper; saute 2 minutes. 3. Add rice and cook 1 minute. 4. Stir in pineapple and remaining ingredients; bring to a boil. 5. Cover, reduce heat and simmer 20 minutes or until rice is done and liquid is absorbed. |
