A tropical taste for those warm summer nights. Ingredients:
1 (9 inch) pie shell, baked |
2 1/2 cups unsweetened pineapple juice |
1/3 cup all-purpose flour |
1 cup white sugar |
1 teaspoon salt |
1 egg |
1 cup flaked coconut |
1 tablespoon butter |
1 teaspoon vanilla extract |
Directions:
1. Combine pineapple juice, flour, sugar, salt, and egg in a blender. Blend until smooth. 2. In a medium saucepan, cook and stir over medium heat until thick. Remove from heat. Stir in coconut, butter and vanilla. Mix well. Pour into baked pie shell. Cool until set. |
