An interesting twist on breakfast, and a good way to jump-start some fruit into the kids! Ingredients:
1 cup bisquick |
1/4 cup pineapple juice |
1/4 cup milk |
12 pineapple chunks |
1 tsp cane sugar |
shredded sweetened coconut |
Directions:
1. Mash the pineapple chunks with a fork, and combine all ingredients except coconut. 2. Spoon about batter onto a hot greased pan. 3. Top with some shredded coconut and spread about 1 tbsp batter over coconut. 4. Flip and brown second side. Repeat for rest of batter. |
