this recipe sounded good to me...the recipe is from the Casa Sedona Bed and Breakfast Inn Sedona, Arizona Ingredients:
1 3/4 c. flour |
1/2 c. quick oats |
1 c. flaked coconut |
1/2 c. brown sugar |
2 t. baking powder |
1/2 t. baking soda |
1 1/2 c. pineapple juice |
1/2 c. applesauce |
1/4 c. butter, melted |
1 egg |
1 t. vanilla |
Directions:
1. In a large bowl, combine first six items, 2. in a separate bowl, blend remaining ingredients until smooth then fold into dry ingredients until just moistened. 3. Spoon into greased mini-muffin tins. 4. Bake at 350 degrees for 25 - 30 minutes 5. . Makes 24 mini-muffins. |
