A flavorful cake with a tropical taste Ingredients:
2 c sugar |
1/2 c oil |
2 eggs |
2 1/2 c flour |
2 t soda |
pinch salt |
1 20oz can crushed pineapple with juice |
1 t coconut extract |
1 c chopped pecans |
frosting |
1 3oz pkg cream cheese |
1/4 c butter, softened |
1 t coconut extract |
1 1/2 c powdered sugar or till right consistency |
milk to consistency if needed |
plain or toasted coconut for decoration |
Directions:
1. Combine ingredients and beat 3 minutes. Pour into greased and floured 13x9 pan. Bake 350 degrees for 35 minutes or till tests done. 2. Frost and sprinkle with coconut. |
