Ingredients:
2 cups fresh pineapple, diced |
1/2 cup sugar |
8 tablespoons unsalted butter, room temperature |
2 eggs |
1 cup all-purpose flour |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground cloves |
1/4 teaspoon ground ginger |
1/4 teaspoon ground nutmeg |
2 teaspoons baking soda |
pinch kosher salt |
Directions:
1. Preheat the oven to 375 degrees F. 2. In a medium bowl, sprinkle the pineapple with half of the sugar, and set aside. 3. In another medium bowl, beat together the butter, remaining sugar, and eggs. In a third medium bowl, combine the flour, cinnamon, cloves, ginger, nutmeg, baking soda, and salt. Add the wet ingredients to the dry, and fold in 2/3 of the pineapple. Spoon the mixture into a small baking dish, or 4 ramekins, and scatter the rest of the pineapple onto the top.
