Pineapple Citrus Salad With Coconut |

This would be a great salad or dessert. Ingredients:
1 grapefruit |
2 oranges |
1 cup pineapple chunk |
1/4 cup mint leaf |
1 tablespoon agave |
1 teaspoon grated peeled ginger |
1 cup cottage cheese |
toasted coconut |
Directions:
1. Segment grapefruit and oranges, reserve the juice and put the fruit in a medium bowl. Put the pineapple, mint leaves, agave and ginger in the same bowl and mix. 2. In a small bowl combine cottage cheese with reserved citrus juices and stir until creamy. Serve the cottage cheese with the fruit around it. Top with coconut and extra mint leaves. |
