Pineapple Citrus Salad With Coconut

This would be a great salad or dessert.
Ingredients:
1 grapefruit
2 oranges
1 cup pineapple chunk
1/4 cup mint leaf
1 tablespoon agave
1 teaspoon grated peeled ginger
1 cup cottage cheese
toasted coconut
Directions:
1. Segment grapefruit and oranges, reserve the juice and put the fruit in a medium bowl. Put the pineapple, mint leaves, agave and ginger in the same bowl and mix.
2. In a small bowl combine cottage cheese with reserved citrus juices and stir until creamy. Serve the cottage cheese with the fruit around it. Top with coconut and extra mint leaves.
