A true old fashion recipe that our familt has always called Grandma Quinn's Cookies. It's the only cookies I remember her making. A soft cookie that is great with milk or coffee. Use a good quality crushed pineapple. The taste will really be better. Batter may be chilled if too soft. Ingredients:
1 cup shortening |
1 cup sugar |
1 cup brown sugar |
2 eggs |
1 cup pineapple, crushed, with juice |
4 cups flour |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 cup nuts, chopped |
2 cups semi-sweet chocolate chips |
1 teaspoon vanilla |
Directions:
1. Cream together the shortening & sugars. 2. Beat in eggs & vanilla until creamy. 3. Stir in pineapple. 4. Combine the flour, salt & soda & add to creamed mixture. 5. Stir in chips & nuts. 6. Bake on sprayed sheets at 400 for about 10 minutes. |
