This recipe came from a church friend. She makes this for us a lot at our bible study group. This is so yummy, so moist and so tasty we can never get enough. We all love it and hope you do to. Ingredients:
4 boneless chicken breasts |
1/4 cup flour |
3 tablespoons butter |
1/2 cup pineapple juice |
1/2 cup chicken broth |
1/2 teaspoon dried tarragon |
1/4 cup half and half |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
2 tablespoons fresh lemon juice |
Directions:
1. Coat chicken with mixture of flour, salt and pepper. 2. Melt butter in skillet. 3. Add chicken and cook over medium high heat until browned on both sides. 4. Cook to desired doneness. 5. Remove to warm plate. 6. Deglaze pan with juice and broth loosening browned bits. 7. Stir in tarragon and half and half then cook just until slightly thickened. 8. Season with salt and pepper. 9. Add lemon juice then spoon sauce over chicken. |
