I adapted one of my favorite recipes my mom makes - I just made it low-fat and sugar free and man it still tastes super yummy! Ingredients:
1/2 onion |
1/3 cup raisins |
2/3 cup water |
1 boneless skinless chicken breast |
1/2 teaspoon sea salt |
1 teaspoon lemon juice |
1/2 cup cashews, roasted salted |
2 dates, finely chopped |
1/2 cup fresh pineapple, and juice |
Directions:
1. Chop onion into a large dice. Cut the dates finely, set aside. 2. In a frying pan on high heat cook onions, raisins, and water. 3. Cut chicken into bite size pieces. 4. When the water has mostly evaporated add the chicken cook for a couple minutes. 5. Add a couple tablespoons of water to pan - this will deglaze the pan. 6. Add the salt, lemon juice, and dates. 7. Add the pineapple and juice. Lower to medium heat and cook for a couple more minutes to make sure chicken is cooked through. If necessary add a bit more pineapple juice or water. 8. Serve warm. |
