From Delightfully Healthmark Ingredients:
1 cup juice-packed pineapple, drained |
1/4 cup low sodium soy sauce |
3 tablespoons wine vinegar |
1 teaspoon dry mustard |
1 tablespoon minced fresh ginger |
4 chicken breasts, skin and fat removed |
2 cups sliced fresh mushrooms |
1 green pepper, seeded and cut into 1-inch chunks |
1 red bell pepper, seeded and cut into 1-inch chunks |
4 green onions, sliced into 1-inch pieces |
Directions:
1. Combine pineapple, say sauce, vinegar, mustard, and ginger. Arrange chicken breats and begetables in a baking dish coated with cooking spray. Pour sauce over. Cover with foil and bake at 325 degrees for 30 to 40 minutes or until chicken is done. |
