I obtained this recipe from an estate sale a few years ago and now make it often. I love the blending of pineapple and cheese. These are really good served warm with pineapple cream cheese on top. Yummers. Ingredients:
8-1/4 ounce can crushed pineapple undrained |
2 cups baking mix |
1 tablespoon sugar |
1/2 cup milk |
1 egg |
1/2 cup shredded mild cheddar cheese |
Directions:
1. Preheat oven to 400. 2. Line 12 medium muffin cups with paper baking cups. 3. Mix pineapple with remaining ingredients then beat vigorously for 30 seconds. 4. Fill muffin cups 2/3 ful. 5. Bake for 15 minutes. |
