Easy to make a day ahead of time. This is one of my son's favorites. Ingredients:
2 (8 ounce) packages cream cheese, softened |
1 (8 ounce) can crushed pineapple, drained |
2 cups finely chopped pecans, divided |
2 tablespoons finely chopped green onions |
2 teaspoons seasoning salt |
Directions:
1. Set aside 1 cup of the pecans to roll the logs inches. 2. Mix remaining ingredients (I use a mixer). 3. Refrigerate for several hours. 4. Divide cheese mixture in half, and roll each half into a log (or make 1 huge log). 5. Roll each log in reserved pecans, wrap in plastic wrap, and refrigerate until serving time. 6. Unwrap, place on platter, and serve with crackers. |
