Pineapple and cream cheese in graham cracker crust. Ingredients:
1 (8x/4 oz.) can crushed pineapple |
1 3 ox. pkg. orange or lemon jello |
1 1/4 c. boiling water |
1 3 oz. pkg. cream cheese |
1/4 tsp. grated orange rind or lemon rind |
3 tbsps. sugar |
1/2 tsp. vanilla |
1 c. sour cream |
Directions:
1. Prepare crumb crust in a 8 inch square pan-drain pineapple, reserving syrup. 2. Dissolve jello in boiling water, add syrup and cool slightly. 3. Meanwhile blend cream cheese, orange rind, sugar and vanilla. 4. Combine 1/2 cup jello and pineapple gradually, blend remaining jello into cheese mixture until smooth, fold in sour cream, pour into crumb crust, chill until set, but not firm. 5. Then carefully spoon on pineapple mixture, chill until firm. 6. Crumb Crust: 7. 1 c. fine graham cracker crumbs 8. 3 Tbsps. sugar 9. 1/4 c. softened margarine 10. Combine ingredients and mix well, press frimly over bottom of square pan. 11. Chill 1 hour before putting mixture in. |
