This tastes similar to Sicilian cheese pies. Ingredients:
2 (20 ounce) cans pineapple chunks, juice reserved |
1 cup white sugar |
3 tablespoons all-purpose flour |
1/4 pound butter, melted |
2 cups shredded cheddar cheese |
25 buttery round crackers, crumbled |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Butter or grease one 2 quart casserole dish. 2. In a mixing bowl, blend together 4 tablespoons reserved pineapple juice, sugar, flour and butter. 3. Add pineapple and cheese; mix well and pour into casserole dish. Bake for 20 minutes. 4. Reduce oven temperature to 300 degrees F (150 degrees C), sprinkle top with cracker crumbs and bake for 20 more minutes. |
