My mom's recipe. This goes well with baked ham. Ingredients:
2 (20 ounce) cans unsweetened pineapple chunks, drained & juice reserved |
2 cups cheddar cheese, grated |
1 cup sugar |
3 tablespoons all-purpose flour |
4 tablespoons reserved pineapple juice |
1/2 cup butter, melted |
1/4 lb ritz cracker, crushed |
Directions:
1. Mix sugar & flour. Stir in 4 tablespoons reserved pineapple juice. 2. Mix pineapple, cheese, melted butter and sugar mixture together. 3. Bake in 9x13 dish at 350 degrees for 20 minutes. 4. Lower temperature to 300 degrees, and bake for 20 minutes. 5. Remove from oven, and top with cracker crumbs. 6. Return to oven long enough to heat crumbs - about 5 minutes. |
