This was given to me by a good friend. At first glimpse, I think I said something intelligible like, EWWWWW . But, I gave it try and my kids love it. I can't even get it to the plate. They eat it out of the pan as soon as it comes out of the oven. Now it's a traditional side at Thanksgiving. Thanks Toni! Ingredients:
1 (20 ounce) can pineapple chunks |
1/2 cup sugar |
3 tablespoons flour |
1 cup shredded cheddar cheese |
1/4 cup melted butter |
1/2 cup buttery cracker crumb (i use club crackers) |
Directions:
1. Drain pineapple, reserving 3 tablespoons of juice. 2. Combine sugar and flour, stir in reserved pineapple juice. 3. Add cheese and pineapple chunks, mixing well. 4. Spoon mixture into 1 quart casserole. 5. Combine melted butter and cracker crumbs, stirring well. 6. Sprinkle over pineapple mixture. 7. Bake at 350 for 20-30 minute or until crumbs are lightly browned. 8. *This is an excellent side dish to ham and I usually double this recipe. 9. Enjoy! |
