Ingredients:
1 cup granulated sugar
1 cup sugar
2/3 cup oil
2 beaten large eggs
1-1/2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
1 cup finely grated carrot
1 cup crushed drained pineapple
Directions:
1. Preheat oven to 375. Prepare muffin tins. Beat together sugar, oil
2. and beaten eggs. Combine flour, baking soda, baking powder, cinnamon
3. and salt then mix well. Add dry mix to wet mix and stir to moisten.
4. Add carrots, pineapple and vanilla. Spoon into pans and bake for 20
5. minutes.
