Pineapple Cake with Cream Cheese Icing |

Deliciously different. Ingredients:
2 eggs |
1 1/2 cups sugar |
2 cups all-purpose flour |
1 (1 lb) can crushed pineapple in juice, undrained |
1/2 cup chopped walnuts |
2 teaspoons baking soda |
1 tablespoon vanilla extract |
2 cups icing sugar |
8 ounces cream cheese, room temperature |
1/4 cup butter, room temperature |
1 tablespoon fresh lemon juice |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 350 degrees F. 2. Lightly butter a 13 x 9 inch pyrex baking dish. 3. Beat eggs in a large bowl until light and fluffy. 4. Add sugar and continue beating until thick and light-coloured. 5. Stir in flour, pineapple (with juice), walnuts, baking soda and vanilla, and mix thoroughly. 6. Pour into prepared pan. 7. Bake 25-30 minutes, or until a tester comes out clean. 8. Let cake cool and ice. 9. For icing: Combine icing sugar, cream cheese, butter, lemon juice and vanilla and mix until fluffy. |
