Pineapple Cake With Cream Cheese Cashew Frosting |

This cake is a showstopper! Your guest's will go nuts over this one. Ingredients:

2 1/2 cups all purpose or unbleached flour |
3 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup butter or margarine, softened |
1 1/4 cups sugar |
3 eggs |
1 teaspoon vanilla |
3/4 cup milk |
8-oz can crushed pineapple |
****frosting |
3/4 cup margarine or butter |
2 cups powdered sugar |
1 egg |
1/2 cup coarsely chopped cashews |
Directions:
1. Heat oven to 350 degrees F. 2. Grease & flour two 8 or 9-inch round cake pans 3. Lightly spoon flour into measuring cup; level off. 4. In medium bowl, combine flour, baking powder and salt. 5. In large bowl, cream margarine & sugar until light & fluffy. 6. Add eggs and vanilla; beat well 7. Alternately add dry ingredients and milk to creamed mixture, mixing well after each addition. 8. Drain pineapple, reserving 1/4 cup pineapple for frosting. 9. Stir in remaining pineapple. 10. Spread evenly in prepared pan 11. Bake at 350 degrees F for 25 - 30 minutes or until toothpick inserted in center comes out clean. 12. Cool 10 minutes; remove from pans. 13. Cool completely. 14. ****FROSTING**** 15. In medium bowl, cream margarine; gradually add powdered sugar, beating well. 16. Add egg, beat until light & fluffy. 17. Stir in reserved 1/4 cup pineapple. 18. Place 1 layer on serving plate; spread with half the frosting. 19. Repeat. 20. Sprinkle top of cake with cashews. 21.
