Moist yellow cake with a pineapple glaze. Easy and delicious. Ingredients:
1 box yellow cake mix |
1 stick butter-melted |
3 large eggs |
1 1/2 cup milk |
1 teaspoon lemon extract |
1 teaspoon vanilla extract |

1 20oz can crushed pineapple with juice |
1/2 cup water |
1 cup sugar |
1/4 cup butter |
1 tablespoon cornstarch |
Directions:
1. Preheat oven to 350 degrees. 2. Grease and flour one 9 x 13 baking pan or two 9 round pans. 3. Sift cake mix into a large mixing bowl. 4. Add butter,eggs,milk,and extracts. Beat for 2 minutes. 5. Pour batter into prepared pans. 6. Bake for 35 minutes or until inserted toothpick comes out clean. 7. Glaze: 8. In a large saucepan over medium heat,combine pineapple,sugar,butter,water,and cornstarch. Mix well 9. Bring mixture to a boil then simmer until thickened. 10. For 9 x 13 pan: 11. Leave warm cake in pan. Cool glaze slightly then pour over cake. 12. Cool completely. 13. For 9 layers: 14. Cool layers completely. Cool glaze until lukewarm. 15. Frost cake as you normally would. |
