Pineapple Bread Pudding

Goes great with ham as a hot side dish or chilled as a dessert. This can be prepared ahead and reheated in a microwave.
Ingredients:
1 stick butter (not margerine)
1 cup sugar
4 eggs, well beaten
1 20oz can of crushed pineapple (include juice)
5 slices of italian or white bread, crusts removed, cut into smallish cubes
Directions:
1. Cream butter and sugar until fluffy
2. add eggs
3. mix well
4. add crushed pineapple
5. fold in bread cubes making sure that bread is completely wet
6. place in a 2 1/2 quart casserole
7. bake at 350 degrees for 45 minutes.
