Easy to make. Stays moist for several days. Always a hit when I take it to work. Excellent breakfast breaed Ingredients:
3 cups flour |
1/3 teaspoon vanilla |
2 cups crushed pineapple |
1 cup oil |
3 eggs, beaten |
1/2 teaspoon cinnamon |
2 cups sugar |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
1 cup walnuts or 1 cup pecans |
Directions:
1. Beat eggs, sugar and oil. 2. Add sifted flour, baking soda, baking powder and cinnamon. 3. Mix in pineapple and walnuts or pecans. 4. Pour into 2 loaf pans. 5. Bake at 325 degrees for 50-60 minutes. |
