Pineapple-Bran Whole-Wheat Muffins

**Adopted Recipe**
Ingredients:
1 cup whole wheat flour
1 tablespoon baking powder
1/4 teaspoon salt
1 1/2 tablespoons brown sugar
1 egg
1 cup all-bran cereal
1/3 cup skim milk
1/4 cup vegetable oil
1 (8 ounce) can crushed pineapple in juice (do not drain)
Directions:
1. Mix the flour, baking powder, salt, and sugar.
2. Beat the egg slightly.
3. Add cereal, milk, and oil to the egg. Stir to combine.
4. Let stand for 2 minutes or until the cereal has softened.
5. Stir the pineapple, including the juice, into the mixture.
6. Add flour mixture, stirring only until combined.
7. Spoon the batter evenly into a paper-lined muffin tin and bake at 400F for about 25 minute.
8. Serve warm.
