Another easy way to dress up canned beets, from one of my old cookbooks. Ingredients:
13 1/2 ounce can pineapple chunks |
1/2 cup water |
1/3 cup apple cider vinegar |
1/4 cup firmly packed brown sugar (i prefer dark brown) |
1 tbsp cornstarch |
1/2 tsp salt |
1/8 tsp ground ginger |
4 cups sliced drained canned beets (about 2 1-lb cans) |
Directions:
1. Drain syrup from the pineapple and combine with water and vinegar. 2. Mix together brown sugar, cornstarch, salt and ginger in a small saucepan, then stir vinegar mixture in and mix completely. 3. Cook over medium heat. 4. Stir constantly until the mixture thickens, 5. Add beet slices and bring to a boil. 6. Just before you are ready to eat, stir the pineapple chunks into the hot mixture and serve. |
